GRAPE BLEND: 100% autochthonous white grape varietals
IN THE VINEYARD: vines are Guyot trained on hilly land with soil of medium texture, over a limestone base, following painstaking pruning and thinning of the bunches of grapes. Harvested by hand in October and then dried for 90 days.
YIELD GRAPES/Ha: 5000 kg grapes per hectare.
HARVEST: beginning of October, by hand, in crates.
VINIFICATION AND AGEING: cold maceration, gently pressing of the grapes and fermentation in oak kegs for 48 months.
REFINEMENT IN THE BOTTLE: 12 months
TASTING NOTES: amber in colour, dense and highly concentrated. Aroma suggesting raisin, dried fig, walnut, and honey, with hints of date, dried apricot and candied fruit. On the palate, citrus peels, dates, candied fruit and spices, with a finish suggesting aromatic herbs and a toasty aftertaste.
