Chianti wine

Today, under the oenological guidance of the young Mirko Niccolai and the experience of Paolo Caciornia, Colombaio has been started since the high quality wine production, entirely focused on the care and vinification of Sangiovese grape cultivated in the Monteriggioni area. Sangiovese is conceived as the traditional vine with its endless potential capable, thanks to the new vinification technologies to express new sensations, it represent the "hero" of the tastes and flavours revolution.
This is the mission of Fattoria il Colombaio, giving life to the expression of Sangiovese grape from the classical traditional tastes to the most refined modern ones.


Vineyards and Wine Cellar

The vineyards are on soils with a loamy-clayey, schist-like texture, like Marl, alternating with siliceous callarei and a significant presence di eavy stone.
The warm and windy climate ensures that the grapes ripen perfectly; the majority of the vineyards have southern exposure with a high plant density. There is a significant presence of Sangiovese, flanked by small areas of Canaiolo, Colorino Trebbiano Toscano, white Malvasia and other French varieties.
The cellar is new concept and located completely underground in the middle of the vineyards in order to ensure timely processing of freshly picked grapes.
All the tanks are stainless steel and kept at a controlled temperature, with barrels and barriques in the aging area. You can visit the cellar to see first-hand the various productive processes.
In the tasting room you can sample and buy wines and olive oil produced by the farm.
